Okonomiyaki is a favorite breakfast at our place!

My vegan version goes like this:

Batter: 1/2 cup flour 1/3 cup water 1 tsp mirin 1 tsp soy sauce 1/8 head shredded cabbage (about two big handfuls)

seseme oil for pan frying

Sauce: 3 tsp soy sauce 1 tsp sake 1 tsp brown rice syrup

Generously topped with vegan mayo, and a single umeboshi :)
